A basic premix for the preparation of Salami with phosphates, ground spices and coarse black pepper.
DirectionsMince meat to required texture. Mix premix, wine and Denkurit together to form a slurry. Mix meat and slurry together. Mince until required consistency is achieved.
UsageMeat & Fat 23.4 kg, Premix 1 kg, Claret/Red Wine 0.6 kg, Denkurit 0.045 kg (45 g), Starter Culture as required, Total 25.045 kg.
