A basic premix for the preparation of Salami with phosphates, ground spices and coarse black pepper.

Directions

Mince meat to required texture. Mix premix, wine and Denkurit together to form a slurry. Mix meat and slurry together. Mince until required consistency is achieved.

Usage

Meat & Fat 23.4 kg, Premix 1 kg, Claret/Red Wine 0.6 kg, Denkurit 0.045 kg (45 g), Starter Culture as required, Total 25.045 kg.

This product is made on the same equipment that also produces products containing allergens listed in the FSANZ Standard 1.2.3.
